A recipe for healthy chickpea and spinach patties

A recipe and instructions for how to make these delicious and healthy chickpea patties. Full of goodness but very tasty. A new favourite in the Eating ideas household!

Ever feel like you eat too much meat?  I reckon we all do and we need to eat more vegetarian fayre.  I tried to think about how to make a well flavoured burger out of some of my favourite ingredients and this is what I came up with,

Chickpeas are one of my all time favourite ingredients and thankfully they are very healthy.  I am making a conscious effort to eat more spinach for its nutritious qualities but I have to sneak it into recipes as on its own it can be quite dull.  These 2 ingredients were my starting point and the rest was improvised.

You can make your own version using whatever ingredients you like but if you want to give mine a go- the details are below

Ingredients

  • 1 can of chickpeas (drained)
  • 1 red onion (finely diced)
  • 1 packet spinach (wilted)
  • 1 tbsp tahini paste
  • juice of half a lemon
  • pinch of chilli flakes
  • 1 tablespoon olive oil
  • ½ tablespoon soy sauce
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 2 tablespoons sunflower seeds
  • 1 egg
  • pinch of salt and pepper

Instructions:

  • Mix the chickpeas and onion in a food processor, pulse a few times
  • Add in spinach, tahini paste, oil, soy sauce, oregano, chilli, paprika, and sunflower seeds, pulse again. Add in the egg, salt, pepper, and mix until mixture comes together and is well blended. Remove the mix from the processor, wrap in cling film and/or  foil and chill for a minimum of 30 minutes Add in spinach, tahini paste, oil, soy sauce, oregano, chilli, paprika, and sunflower seeds, pulse again
  • Add in spinach, tahini paste, oil, soy sauce, oregano, chilli, paprika, and sunflower seeds, pulse again. Add in the egg, salt, pepper, and mix until mixture comes together and is well blended. Remove the mix from the processor, wrap in cling film and/or  foil and chill for a minimum of 30 minutes Add in the egg, salt, pepper, and mix until mixture comes together and is well blended.
  • Remove the mix from the processor, wrap in cling film and/or  foil and chill for a minimum of 30 minutes
  • Shape into burgers and bake in the oven at 200C for 30 minutes, flipping half way through
  • serve and enjoy
