3 ways with Pesto & a recipe for pea and pesto soup

Love pesto? Here are 3 great ways to use it including a pea and pesto soup, pesto dip and pesto topped salmon. Totally delicious!


I met Kieran from Love Olive at the launch of the newly renovated Musgrave Marketplace.  We had a long chat about his range of products and my general love of most of them.  When he realised that I hadn’t tried the Love Olive version, he gave me some to sample and to use in a recipe. Challenge on!

The first thing I noticed is that this is very different from the stuff we buy in jars.  Its fresh and zingy, packed full of flavour.  Worryingly, I could just eat this stuff off the spoon!  I started simple with an easy pesto dip, just adding a spoonful of the pesto to some low fat natural yoghurt.  Healthy and delicious- perfect with crisps or vegetable crudités if you are being healthy.

Second attempt was Pesto Salmon.  Simply a spoonful of pesto smeared on top of a salmon fillet and baked in the oven.  What a winner.  I loved this, so simple and yet so tasty.

My third use was in Pea and Pesto soup.  Who knew that pea and pesto were the perfect partners?  They really do work well together.  The recipe and instructions  for the soup are below the pictures and video.  Give it a try and let me know how you get on.
