This is a really simple, easy to cook recipe which makes a tasty but healthy supper

Recipe

1 red pepper, halved and deseeded

half a red onion, chopped

2 rashers of bacon

1 x small tin of tomatoes

6-8 button mushrooms, thinly sliced

lazy garlic

mixed herbs

salt and pepper

Bake the pepper in the oven for 20-30 minutes until soft

meanwhile, fry the onion, mushrooms and bacon

add tomatoes  and simmer to reduce

add garlic and herbs to own taste

season with salt and pepper

when the sauce is reduced, pour into the pepper halves and serve
