I ordered what I thought was chicken salad with pineapple and was served this amazing creation. It comprised small piecess of chicken with sultanas chutney, cashew nuts and spicy mayonaise all served in half a pineapple
It looked stunning and tasted really good. Although the pineapple looks huge, the actual serving wasn’t too big but was a light tasty lunch!

  1. I have never thought of doing pniaepple with the stovetop stuffing. I have seen enough chicken dishes with pniaepple, but this is a pretty intriguing spin.My wife thought it was interesting too.The next time I see stuffing on sale I might give this a whirl.

  2. This reminds me of a cekhicn dish my mom used to make when we were kids. But, her’s was kind of cloying. I think this sounds great and since it’s got pantry ingredients, it’s a perfect last minute dish. Thanks!
