I had friends round for dinner and staying over.  I decided that you really cant beat a roast dinner.  I seasoned and roasted a chicken and added potatoes to the roasting pan to roast in the chicken juices.  I chopped aubergine, courgette, parsnip, leek and red onion and roasted on a baking tray for 45 minutes.  Served the whole  lot with a delicious gravy.  A simple dish but did the trick!
